Chicken potato corn chowder with bacon

Ingredients:
- Bacon strips roughly chopped (8)
- 1 onion chopped in fine slices
- 4 minces garlic gloves
- 2 deseeded and finely chopped jalapenos
- 3 cups of corn kernels
- 2 potatoes, peeled and cut into small cubes
- 1 chicken breast cut into small pieces
- 2 cups of chicken broth
- 1 teaspoons of dried thyme
- ¾ cups of cream
- 2 tablespoons of all-purpose flour

Preparation:
- Use your instant pot to saute the bacon first until it has a golden color. Then, remove it and use the fat reaming in the pot to saute the onion, garlic and jalapenos until the onion has a soft consistence.
- Then, add the potatoes, chicken breast and broth, salt, pepper, and corn kernels. Set the pot to cook function for ten minutes and then turn the valve to vent, then turn on the sauté function bringing your soup to a simmer. Add the cream and flour (previously whisked together). Stir until the soup boils, and then simmer it for 5 minutes until it gets a thick consistence. Turn the cooker off and add the bacon and shopped chives. (if it is too thick you can add some water or broth to adjust as you like)

- 1 diced onion

- Make sure to mix everything together and then let it cook in sauté mode for about 3 minutes to get the creamy consistence.
Instant Mac and Cheese

Ingredients:
- 1 pound of elbow macaroni
- 12 oz of can evaporated milk
- 3 tablespoons of unsalted butter
- 3 cups of shredded cheddar
- Kosher salt
Preparation:
- Put the macaroni, salt and 4 cups of water in the instant pot, close the lid and set it to pressure cook for 4 minutes. Then, set the quick release cycle until it is complete, remove the lid and set the low sauté mode.
- Stir the butter, ¼ cup of water and the evaporated milk. Then add the cheddar, while stirring the mix. Make sure to add the cheddar slowly, while constantly stirring.
- Wait until the cheese is completely melted and serve hot.
Sweet potato steel cut oats.
This delicious and complete recipe is a great option for a warm and tasty breakfast. You can prepare it advance the night before and let it set
Cooking time: 20 minutes
Ingredients:
- ½ cup o steel cut oats
- 1 cup of chopped sweet potato
- 2 tablespoons of golden raisins
- 1 1/3 cups of water
- ½ tablespoon of vanilla extract
- ½ tablespoon of cinnamon
- ¼ teaspoon of cardamom
- 1/8 teaspoon of ginger
- Kosher salt
- ¼ cup of milk (more advisable to use almond or coconut milk)
Preparation:
- Place the sweet potato, oats, raisins and spices in the pot, close the lid and make sure it is sealed. Set cooking time to 15 minutes and then, allow the pot to fully release.
- After it as completed release, remove the lid and stir. You can smash the potatoes so they completely blend in or leave then in small pieces.
- Add the milk, salt stir for 1 minute and serve.
- You can add some sugar if want the recipe to be sweeter.
Rice pudding
You can eat this delicious and easy-to-prepare dessert either hot or cold after refrigerating. The preparation in the electric pressure cooker is fast, simple and gives the pudding a perfect consistence.
Cooking time: 20 minutes
Ingredients:
- 1 cup of rice (for better consistency use Arborio rice)
- 1 ½ cups of water
- ¼ teaspoon of salt
- 2 cups of whole milk
- ½ cup of sugar
- 2 eggs
- ½ teaspoon vanilla extract
- ¾ cups of raisins
Preparation:
- Place the water, rice and salt in the pot and close the lid. Set the high pressure option and cook for 3 minutes. Use the natural release for 10 minutes after the beep of the pressure cooker turns off.
- Add the sugar and 1 ½ cups of milk, making sure to combine all together.
- Use a mixing bowl to whisk the remaining ½ cup o milk with the eggs and the vanilla and add it to the pot. Set the sauté mode and cook, while stirring the mix until it boils.
- Remove the pot from the pressure cooker and add the raisins, making sure to stir everything together.
- If desired, you can add a topping of whipped cream or sprinkle some cinnamon.
